A cooking class for diabetics was held last Thursday just in time for holiday cooking. Approximately 17 people attended the class, held at the Thomson McDuffie Library and sponsored by the McDuffie County Cooperative Extension Service, the McDuffie County Health Department and the McDuffie Regional Medical Center.
The class educated participants on the effects of food selection and preparation on blood sugar, and offered tips on how to use artificial sweeteners and incorporate fiber into the diet.
Recipes for low carbohydrate/low fat dishes were provided for attendees to take home and use in holiday meal preparation.
County Extension Agent Caroline Richardson said they have been holding annual cooking classes since 2002.
